Their spicy is SPICYYYY, beware! I got their dried noodles, and even though it has only one , it was enough for me. The Malatang will leave me with snot running down my nose and pop my ears lol. I also got their mustard greens noodle, which has quite the kick as well. But it's a nice, warm meal for when the weather gets cold!

Overall the food was good. Tried some of the appetizers, ramen and rice noodle. The taste of the appetizers matched with what we're expecting. Ramen and rice noodle are so flavorful and have tons of toppings (not only plenty of soup and noodle)

RAMEN! ...but wait-there's more. So much more than ramen (which was DELICIOUS-I had the vegetable ramen with enoki mushroom, bean sprout, seaweed, corn, bamboo shoots, nori and scallion; I chose the Japanese creamy vegetable broth over the miso soup base). So many soup varieties including Thai style, tomato, original bone broth, spicy, fish maw, chicken, beef, pork and even sauerkraut soups. There are plenty of hot and cold appetizers available plus fried rice and stirfried dishes. Don't forget Boba, fruit teas, milk, teas...etc. Loved my lemon green (fruit) tea with clear boba. I just happened to be driving by between meetings, spotted Ji Bei Chuan and got takeout. Service was awesome...really helpful and fast. There's a good sized dining room if you'd prefer to eat there. I would like to have one of these places closer to home, please. Thank you.

Mala Fish Slices Rice Noodles: Very generous portions with the perfect amount of spiciness, lots of vegetables & noodles and the soft fish fillets paired perfectly with the broth. The Taiwanese fried chicken was also a 10/10! They somehow fried the chicken flawlessly with the appropriate amount of crunchiness and seasoning. It tasted good alone and with the sauce (I think it was sweet chili?) provided as well. I wish I had a photo of it, but I stomach got to it before my camera.

It's all about the noodles. They are chewy, bouncy and slightly elastic at JiBeiChuan. I bought a takeout order of Chicken Noodle Soup ( bone broth) because it was quick and simple. The meal was packed in the most elaborate sealed plastic bowl which separated the noodles from the soup to keep them from getting overcooked and mushy. The rice noodles survived the trip home. I was even more amazed when my fussy, fussy husband asked to have some noodle soup. He really enjoyed it. In addition to chicken, the soup included fried tofu "puffs" and soy bean curd. It was packed with protein. This restaurant offers many fusion dishes, borrowing from so many different Asian cuisines. There's ramen and udon which are Japanese noodles. Some are served with a miso soup base. There are Thai seasonings in some of the dishes. The Mala dishes are supposed to be spicy thanks to Sichuan chili peppers. I can't wait to try them. There are dishes which I think of as Asian "delicacies." Fish maw (swim bladder), tripe and pork intestine. I ate them as a child but no longer have the palate for them. There are also ingredients used in Chinese medicine which many Capital District residents don't usually expect to see when they order Chinese. The Goji berries are high in antioxidants--as are "wood ears" --a type of tree fungus or "mushroom." While this is not the first noodle shop in town, this one offers somethings that are clearly different. The eatery is cute, colorful, modern and clean. The giant noodle soup sculpture at the entrance made me laugh out loud. I could see the staffer at the counter was watching for my reaction. She laughed, too. The staff is nice, friendly and helpful. They filled my order quickly. This is third noodle shop in a chain. Others are in Queens, NY and Boston. This newest addition is located in a Market 32 strip mall in Guilderland across from Crossgates Mall.

You never know what secrets are hidden in a little strip mall. This new Asian venue offers noodles and more. Menu offers not only ramen soups with a protein of your choice but also some dim sum favs (appetizers). Scallion pancake was respectible as well as the garlic cucumbers and the woodear salad. SO enjoyed a traditional beef noodle soup; he said it was good. An option not offered in many venues is the condiments available tableside. You can find spicy hot oil, soy sauce and asian vinegar for you to add to your dish to put your personal touch on it. Parking is very spacious being in a strip mall. Service was quick with numerous tables available. Being a newly opened establishment, amiance was clean and fresh. Restrooms, which I normally don't include in a review, are gender neutral. I'm sure we will be returning to enjoy the many options on the menu. Of note, while Pho is a menu item, all pho selections were crossed out. A lot of others options to choose from. Enjoy!

Came here for lunch yesterday after mom's doctor's appointment. She wanted beef noodle soup, and I remembered reading about this new place in Guilderland. Also, the location is convenient. Mom ended up choosing the original seafood noodle soup. I went with the original beef brisket noodle soup. My soup was flavorful. Nicely braised rough flank beef chunks. Some veggies and wood ear, a bit of fried tofu. Mushrooms too. Good size serving. I'm not sure if there are noodle choices. Should have brought reading glasses. Servers are pleasant and helpful. They do speak Mandarin Chinese if you need that. Perfect English, so no worries. The place is clean. Looks trendy. Condiments on the table, including hot chili oil. I am giving this a five because it was pleasant and welcoming. Not quite NYC or Toronto, but will do for the Capital District.

We ate here on August 12, during the soft opening. We received edamame on the house, and 10% off our bill. This was a tough overall rating to make, and I wavered a bit between 4 and 5. Here's a bit of a breakdown. Location is 5 out of five. Conveniently located in the Market 32 plaza across from Crossgates Mall, there's quick and easy highway access from everywhere, and no issues finding a parking spot. The inside is well lit and spacious, with two unisex bathrooms, and a tastefully decorated dining area. We were a party of nine, and had no issues moving tables and chairs around to make it work. Food is 5 for variety, value, and portion size, but flavor/texture was hit or miss. We loved the scallion pancakes, edamame, iced Thai tea, but the sauerkraut soup didn't have any sauerkraut flavor and the fish maw soup was just a tasty chicken noodle soup, with a few pieces of fish maw on top. My wife liked the mala spicy soup with brisket and marinated egg add-on. Great flavor, but way too spicy for me. She thought it was a perfect spice level. Service was 5 out of 5. They were very friendly and accommodating, but quite short handed. I ended up grabbing our own menus, a pair of chopsticks, and some napkins. Similar to when I was in China, the bill was not brought until we asked for it, and they kept refilling our waters for hours. Overall, if we're in the area, or if someone wants to go here, we would happily come back, but overall, it doesn't make it to my list of top five in the area.
